Green Chile Chicken Salad 1 Roasted Chicken debonned and skinned
1 Red Bell Pepper chopped
5 Stalks of Celery
5 Scallions chopped
1 sml can of green chile drained/chopped
2 Heaping Tablespoons of Mayonnaise
1 Heaping Tablespoon of Sour Cream
salt and pepper to taste
In a Bowl put chicken that has been debonned and skinned and set aside.
In a pan saute the bell pepper, celery and scallions until tender and
add to chicken. In a separate bowl mix Mayo and Sour Cream and add salt
and pepper. Pour over chicken add green chile stirr again and wa la you
have a low carb green chile chiken salad.
I serve over salad green or by itself. I have had rave reviews on this one.
