COBB SALAD
Dressing:
3/4 teaspoon salt
1/2 teaspoon dry mustard
1/8 teaspoon ground pepper
1/4 cup red wine vinegar
1 clove garlic -- crushed
1/2 cup olive oil
1/4 cup salad oil
In jar with tight fitting lid combine salt, dry mustard, ground pepper and red wine vinegar. Cover and shake. Add remaining ingredients; cover and shake well.
Serves 6 @ 242 calories, 27 grams fat, trace protein, and 1 gram carbohydrate w/ trace fiber. (Nutritional analysis is for dressing only.)
Salad:
1 head lettuce, shredded
6 cooked chicken breasts, skinned, boned and finely chopped
1/2 pound bacon, cooked and crumbled
6 hard-cooked eggs, finely chopped
4 ounces Blue cheese, crumbled
2 green onions, finely chopped
2 large tomatoes, seeded and finely chopped
Line 6 large salad bowls or one large serving bowl with shredded lettuce. Arrange the remaining ingredients on the lettuce. Shake dressing, pour over salad, or use bottled dressing. Toss and serve immediately.
Serves 6 @ 873 calories, 56 grams fat, 83 grams protein, and 4 grams
carbohydrates w/ 1 gram fiber. (Nutritional analysis is for salad
only.)
