Yellow Squash
6 Bacon strips
1/2 medium Onion
3 to 4 yellow squash
6 fresh medium mushrooms

Fry bacon and chop. To bacon dripping add chopped vegetables and chopped bacon. Stir fry 'till slightly crisp cooked.

Stuffed Yellow Squash
yellow squash, one per person
diced onion
prepared mustard
Whole wheat breadcrumbs
cheddar cheese
seasoned salt and pepper to taste

Boil whole squash just until tender(a skewer will slide through with ease)
Let squash cool. Slice each squash in half and scoop out middle of each squash. To the scooped out squash, add onion, mustard, seasoned salt and pepper to taste.Add small amount of grated cheddar cheese. Add only enough bread crumbs to bind the mixture together. Place a small amount of this stuffing in the middle of each squash half. Salt and pepper the squash halves and sprinkle each half with cheddar cheese. Bake til cheese melts and thoroughly heated.
