Baked Almond Cod
1 lb. thick cod fillet
3/4 C. ground almonds
juice of one lemon
1/2 tsp dried basil
1/4 tsp sea salt
1 tsp brewer's yeast
1/2 C diced shallot or leek
1 Tbsp. crushed garlic
Combine almond meal, salt, basil and yeast in a shallow dish
(for breading). Saute shallot and garlic in olive oil till
translucent. Remove from heat. Oil a glass baking dish. Rinse
fish and shake off excess water. Place in breading mix and press
to adhere. Place fish, breaded side down, in baking dish. Spread
shallot mix over top of fillet and cover with remaining almond
mix. Press lightly. Drizzle lemon juice over, then drizzle olive
oil over(lightly). Bake at 375 for 40 min or till fish is done.
