| Avocado Salad
1 medium ripe avocado-cubed
2 stalks celery-diced
1 can luncheon meat-cubed
Sprinkle with olive oil and vinegar or a low carb salad dressing.
Serve on a bed of mixed greens or a lettuce leaf.
If desired, sprinkle with chopped nuts.
Serves 2 (half recipe for one)
